Tasting Notes
Luscious cassis and dark cherry aromas accentuate the delicate nuance of cigarbox, dark chocolate and vanilla smoke that permeate out of the glass. The wine has firm and full tannins that are not drying, but rather smooth and delicate. The backbone of bright acidity and mouth filling tannins will allow this wine to age spectacularly while at the same time allowing it to be enjoyed at the present time.
Winemaker Notes
The grapes were crushed the day they were picked to preserve freshness. Fermented in open-top tanks and manually punched down to allow for more intense flavour extraction. After primary fermentation, the wine went through secondary fermentation (Malolactic) in barrel. The wine was then aged in a blend of French and American Oak until maturity and then filtered and bottled.
Food Pairing Notes
Try with braised beef short ribs, lamb shanks, and grilled ribeye steaks. The Cabernet Sauvignon’s firm tannins compliment medium-bodied, firm-textured cow's milk cheeses like Gouda, Comte and Beemster Classic. This wine is also a great match for a chocolate desserts.
