Inniskillin Okanagan 2017 Discovery Sparkling Tempranillo

Picked in mid-September to preserve the intense acidity required for sparkling wine. Sourced from 100% Tempranillo, it was pressed and fermented in stainless steel tank. Secondary fermentation was initialized on January, and it was subsequently disgorged in May where it was given 16 mL of dosage to give an underlying sweetness to balance the acidity.
Aromas of strawberries and cream, grapefruit, and raspberries give way to luscious notes of strawberry and lemon on the palate. Bright acidity gives it a nice refreshing finish.
Food Pairing Notes
Try it with Chorizo and gouda on a toasted baguette slice, grilled calimari in a lemon butter sauce, Moroccan-spiced chicken thighs on a bed of couscous, or Chana Masala with Mango chutney. Cheese: Gouda, Baked Brie, Gruyere.
