Mulled Wine Hot Chocolate

Ingredients
- 400g Caster Sugar
- 200g Cocoa Powder
- 2 Cinnamon Sticks
- 5 Star Anise
- 8 Cloves
- 500g Dark Chocolate
- 2 Clementines, halved
- 1 Sprig of Rosemary
- 1 Bottle of Jackson-Triggs Reserve Merlot
Directions
Add 500ml of water to a pot, followed by the sugar, cocoa powder and all the spices. Bring to a simmer.
Remove from the heat, add the chocolate and whisk until fully incorporated. Add the clementines and rosemary and allow to sit for 10 minutes.
Add Jackson-Triggs Reserve Merlot to the mixture and warm through gently.
Best served warm.
