Braised Short‑Rib
Dry‑rubbed and rested overnight, then slowly braised in red wine for eight hours. Finished with a rich cherry au jus, served alongside creamy wild mushroom risotto and seasonal vegetables.

Cured overnight in signature herbs and spices, cooked low and slow, then perfectly seared to achieve a golden, crispy skin. Served with creamy wild mushroom risotto, seasonal vegetables, and a peach pan jus.
