Maple Bacon Double Cheeseburgers
- 3 lbs ground beef chuck
- vegetable oil, to grill
- 12 slices bacon, halved
- 3 tbsps pure maple syrup
- coarsely ground pepper
- 6 sesame hamburger buns, split
- 1/4 cup mayonaise
- 2 tbsps ketchup
- 2 tsps spicy brown mustard
- 1 tsp hot sauce
- salt
- 12 slices Colby jack cheese
- 6 pickles, sliced
Form the ground beef into 12 thin patties. Place on a baking sheet and refridgerate for 30 minutes to firm up. Preheat a grill to high and lightly oil the grates.
In a large skillet, add the bacon on medium heat and cook, turning occasionally until desired crispness, 15 - 20 minutes. Remove bacon to a plate, reserve drippings in a bowl.
Return bacon to skillet, drizzle with maple syrup and sprinkle with 1 teaspoon pepper. Cook over medium heat, turning the bacon until glazed. Remove to plate to cool. Brush buns with bacon droppings. Mix the mayonaise, ketchup, mustard and hot sauce in a small bowl.
Season the patties with salt and pepper on both sides. Working in batches, grill the patties for about 2 minutes before flipping and topping with cheese. Cover and cook 30 more seconds for medium doneness. Toast buns on the grill
Assemble the burgers by spreading the mayonaise mixture on the buns. Fill with pickles, patties and bacon. Cheers & enjoy!
