  • 4 Ontario peaches, pitted and sliced
  • 1/4 lb sliced prosciutto
  • 1/4 lb fresh ricotta cheese, crumbled
  • 1 small bunch basil, torn into pieces
  • 2 tbsps good quality olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

Arrange slices of prosciutto and peaches on a plate. Top with crumbled ricotta and torn basil and finish with a drizzle of olive oil, fresh cracked pepper and salt.
