Aromas of red fruit, black cherry, currants and hints of mushroom. Flavours of raspberry and strawberry with a bit of dried fruit, currant and plum. Medium tannin structure (silky, fine grained tannins) and bright acidity leading to a medium to long length finish.
The onset of bud break was a few weeks ahead of the “regular season”, and was complemented with hot summer days and cool nights. The latter part of the summer and early fall cooled off to allow the grapes to reach their full flavour maturity. The white and red wines both benefited from the cooler temperatures at the end of summer to allow for slightly longer hang time which helped flavour development catch up to sugar accumulation. The white wine grapes developed intense fruit flavors while still holding onto some bright acidity. The red wine grapes experienced an amazing season, the extra hang time allowed the red wines to develop more complex flavour and tannin profiles.
Harvested in mid October with a high percentage of shrivelling in the berries, resulting in more concentrated flavours. The juice saw a three-day cold soak with a ten-day fermentation, with punchdowns threee times a day. The wine went into a majority of French oak, with about 30% brand new barrels, for about 8 months.
Food Pairing Notes
Pairs well with duck or wild fowl and beef bourguignon. Cheese - Gouda, Gruyere or a young Cheddar.
