2015 Inniskillin Dark Horse Vineyard Meritage
There are intense blackberry, dark plum, earthiness, dark chocolate, and vanilla aromas. The palate is overflowing with plenty of cassis, jammy blackberry, some loose leaf tea notes, and some oaky vanilla notes. The tannins are rich, yet not too harsh, and the finish lingers long after the last sip.
The onset of bud break was a few weeks ahead of the “regular season”, and was complemented with hot summer days and cool nights. The latter part of the summer and early fall cooled off to allow the grapes to reach their full flavour maturity. The white and red wines both benefited from the cooler temperatures at the end of summer to allow for slightly longer hang time which helped flavour development catch up to sugar accumulation. The white wine grapes developed intense fruit flavors while still holding onto some bright acidity. The red wine grapes experienced an amazing season, the extra hang time allowed the red wines to develop more complex flavour and tannin profiles.
The grapes from our Dark Horse Vineyard came in looking beautiful. They were gently crushed, destemmed and fermented in open top stainless steel tanks for 10-14 days. The juice was punched down twice daily to help with flavour and colour extraction. The wines went through full malolactic fermentation and then were aged in a specially selected blend of French (70%) and American (30%) oak for about 14 months before being bottled. Merlot 74%, Cabernet Franc 17%, Cabernet Sauvignon 9%
Food Pairing Notes
Try this rich, full bodied wine with foods of similar character, such as filet mignon, beef strogonoff, fried chicken, duck confit or lamb shank. This wine pairs best with aged, bold flavoured cheeses such as Mimolette.
